Ingredients (Serves 2)

100g + 2 tbsp coconut yoghurt
100g raspberries
4 tbsp chia seeds
300ml coconut milk
4 scoops Collagen Complex

Optional

Agave or honey
Fruit, nuts or seeds for the topping

Directions

Combine chia seeds and coconut yoghurt in a bowl and mix.

In a separate bowl or cup, stir Collagen Complex in the coconut milk until fully dissolved.

Combine yoghurt with the milk mixture and stir, before chilling it in the fridge until set. Once your pudding has firmed up, top with raspberries and an optional drizzle of agave syrup, fruit, seeds, or nuts.

Tips

Before you put the mixture in the fridge, give it a stir every 10 mins for the first half an hour so the chia seeds don’t clump together.

The mixture will look runny at first, but will stiffen once the chia seeds expand. Chill overnight in the fridge, or at least two hours.

Ingredients (makes 12)

100g cashews
100g almonds
40g desiccated coconut
12 scoops Collagen Complex
4 tbsp cacao powder
200g pitted medjool dates
A pinch of salt
Extra desiccated coconut for rolling

Directions

Add cashews, almonds and desiccated coconut to a food processor. Blend until it forms a fine, sandy texture.

Turn off the food processor, then add Collagen Complex and cacao powder into the mixer bowl. Pulse until evenly combined.

With the food processor running, slowly add two or three dates at a time. The mixture should start to clump together.

When there are no more large chunks, turn off the food processor. The mixture should stick together easily when pinched.

Remove the blade and safely set aside. Pull off bite-sized amounts of mixture and roll into balls. Lightly wet your hands with water to make rolling easier.

Pour the extra desiccated coconut on a plate and gently roll each ball to coat.
Place on a plate, or store in a container in the fridge. Eat within one week.

Ingredients (serves 2)

250ml coconut milk (or any you prefer)
150ml orange or apple juice
Fresh turmeric (to taste)
Fresh ginger (to taste)
2 scoops Collagen Complex
120g frozen mango
1 frozen banana
1 lime
1 passionfruit

Directions

Add the milk, orange juice, turmeric, ginger, and Collagen Complex to the jug of a blender. Blend until smooth.

Turn off the blender. Add in the frozen mango, frozen banana, a squeeze of fresh lime, and passionfruit pulp.

Blend again until smooth, and serve.
